Our kitchen


At Köhlerstüble we serve vegan Swabian comfort food – freshly prepared and completely homemade in our own culinary manufactory.


Many of our dishes are inspired by traditional family recipes which we reinterpret fully plant-based way. Our Spätzle are still hand-scraped, just like in the past, and we also prepare our Maultaschen, roasts and saucesentirely from scratch.


We use fresh, regional and seasonal ingredients preparing all dishes with great care and attention to detail.


As we operate our restaurant under a private cooking conceptand prepare everything fresh in advance, we kindly ask you to pre-order your dishes when making your reservation.


Side dishes cannot be exchanged, but maybe ordered additionally.


Soups, side dishes and desserts are only available in combination with a main course per person.


For groups of six or more, we kindly ask for your understanding that a maximum of two different main courses may be selected per group. Unfortunately, Küchle and Maultaschenare not available for larger groups.


All our dishes are homemade, fully plant-based and contain soy and gluten. They may also contain tree nuts and legumes.

Traditional Swabian Dishes Explained 



Spätzle


Spätzle are a traditional Swabian «egg-style» noodle made fresh from dough and scraped by hand into boiling water. They are one of the most beloved dishes of the region and are typically served with rich sauces or roasted onions.



Maultaschen


Maultaschen are often described as the Swabian version of ravioli. Traditionally they are large filled pasta pockets served in broth or with sauce. At Köhlerstüble we prepare them fully plant-based and handmade.



Küchle «Fleischküchle style»


Küchle are traditionally pan-fried patties similar to meatballs. Our vegan version recreates the classic Swabian flavor while being completely plant-based.



Gaisburger Marsch


Gaisburger Marsch is a traditional Swabian stew with potatoes, vegetables and pasta. It is one of the most famous comfort dishes of the Stuttgart region.



Spätzle «Käsespätzle style»


Käsespätzle are a popular Swabian comfort dish made from Spätzle mixed with melted «cheese style» and topped with crispy fried onions. Our version recreates this classic entirely vegan.



SiedflOi!sch Swabian boiled «beef» style


SiedflOi!sch is a traditional Swabian dish of slowly simmered «beef» served with horseradish sauce and potatoes. Our version recreates this classic completely vegan.



Zwiebelrostbraten


Zwiebelrostbraten is one of the most iconic Swabian dishes: a roast served with a rich sauce and crispy onions. At Köhlerstüble we prepare a vegan interpretation of this classic.



Sauerbraten


Sauerbraten is a traditional German pot roast cooked in a rich, slightly tangy sauce. Our version is prepared completely plant-based.



Stroganoff


Stroganoff is a classic dish with sliced meat in a creamy sauce. Our vegan version is served with freshly made Spätzle.
